Pitu is a Cachaca ‘Brazilian Spirit’ made from freshly harvested sugarcane also known as sugarcane schnapps. Pitu is the main ingredient in Caipirinha, brazil’s national cocktail. The green sugar cane is shredded, the chaff removed and then mashed, fermented for about 14 days. It is then distilled clear in colour with a tart sugarcane nose. The palate is dry and clean with some fruit character and grassy undertones.

The sagatiba velha is handcrafted in small batches using the traditional copper pot distillation method. It is then aged for 2 years in white American oak, filtered through osmosis for clarity. The American barrels are second use bourbon barrels from Jim Beam. The result is a gold cachaca with sweet butterscotch, bananas and caramel on the nose, followed by opulent butterscotch, a little heat and subtle spice on the palate, finishing sweet and clean with hints of caramel.

Fazenda Soldade Ltd established in 1977 use traditional Pot-still distillation in the production of Tucano Cachaca. The sugarcane liquid is distilled twice in small copper pot stills and then a portion is aged in oak barrels. The Bastos Ribeiro Brothers can use three different types of wood in the ageing process, Jequitiba (Brazilian Mahogany)which adds citrus and mineral, Oak which impairs vanilla and almond and IPE(Noble wood-hardwood) which adds spice and tobacco.

The Prata or silver comes in a hand woven straw packaging and is aged in Brazilian walnut barrels (Freijo barrels) for 2 years. On the palate fresh banana, warm spice with brown sugar, finishing clean and dry with mineral water undertones.
