Sourced from 16 hectares of single estate vines planted in 1968, the parcels of fruit are organically harvested in late September, with vinification carried out over an 18 day period. The fermented wine is then placed in French and American oak barrels for 18 months and then bottle aged for a further 2 years, prior to release.

Tasting Note from Fairley's Wines | 2011 ...

The Single Vineyard Blend appears deep ruby red with an abundance of ripe red fruit and black oak aged fruit, herbal with hints of mint on the nose. The palate full, with minty blackcurrant and raspberry, soft with seasoned smoked oak, finishing long with structure and intensity. An excellent Bordeaux blend with extended aging potential, which would be best served with venison and boar. Please allow to-breathe 1-2 hours and may need to be decanted.
