Review for the Negre Cava Brut ...
The fruit for the Molto Negre Cava Brut was sourced from Catalan vineyards around Vilafranca del Penedes, the heart of Penedes. The term Cava D.O not only covers the area of production but also the method of production and in this case it is known as the Traditional Method, whereby secondary fermentation takes place in the bottle, just as in Champagne. The D.O is not just restricted to Penedes but also covers wine regions such as La Rioja and Navarra, as long as the Traditional Method is used, with a minimum of 9 months aging in the bottle before Degorgement.

The Red House Molto Negre Cava Brut appears golden yellow with fine bubbles, discreet foam yet persistent. The nose opens with subtle green fruit, mingled with fetching tropical aromas, citrus and floral notes, underlying almond with a little spice. The palate is lively with balanced acidity, mandarin and pear with hints of banana and even more spiced citrus, finishing full with almond and toasted bread. An excellent but different Cava that should be served with different breads or even on its own.
