Tasting Note from Fairley's Wines ...

The resulting Neethlingshof Estate The Caracal appears almost black with intense ruby highlights in colour, the nose opens with an array of black and red fruit aromas, locked in with cedar spice, pepper and sweet vanilla cream. The palate overloads with rich plum, dark cherry and lashings of blackcurrant, velvety soft but robust with spice and pepper, finishing full with prune and even more dark fruits. An excellent red which will get better and better over the next 10 years, allow to breathe 1-2 hours and would be best served with steak, beef, roasts and mature cheeses.
