The Pinot Noir is sourced from north facing 30 year old Vines, situated on the Waipara Valley, North Canterbury. The Fruit was picked in blocks and allowed to macerate over a number of days. The fermentation is carried out naturally in open vats and after the wine is placed in selected Burgundian barrels for 18 months, prior to the different batches being blended and bottled.

The Burgundy style Pinot Noir appears expressive purple with pomegranate, chocolate and an abundance of dried red fruit. The palate is intense and complex with ripe tannins, dark cherry - plum fruits, mingled with savoury raspberry, mineral and hints of dried herbs, finishing soft and long with even more dried savoury fruits. An excellent Red, which should be allowed to breathe, 1-2 hours and would be best served with Christmas dinner, grilled meats and grilled mushrooms.
