Fairley's Wines Tasting Note ...

The resulting Babich Gimblett Gravels Merlot Cabernet appears almost garnet with pronounced intensity. The nose is an austere of savoury black fruit, mingled with ripe red fruit character, spice and hints of liquorice. The palate is full of sweet blackberries, wild blackcurrants and silky soft plum, the gentle oak gives way to cocoa and leather, finishing savoury soft, with lingering dark fruit character. This Babich medium bodied red is definitely a food wine of character, that requires 1-2 hours to-breathe and will continue to get better with age 3-5 years. Best served with smoked meats, salamis with antipasto and beef casserole or lamb shanks.
