Maison Simonnet Febvre dates to 1840 and is the only winery in Chablis, producing Cremant de Bourgogne, using the traditional method of production. The grapes are harvested by hand from vines with an average age of 20 years, in small perforated crates. After fermentation the sparkling wine is aged for 24 months in the cellars of the Winery.

Persistent fine bubbles, followed by aromas of citrus fruit, accompanied by particularly fetching stone fruit and baked breadcrumb on the nose. The palate is creamy and lively with lasting lemon zest, underlying peach and hints of mouthcoating red fruit, finishing long and fresh with even more citrus cream.
