The resulting sparkling wine appears bright with fine persistent bubbles, with lashings of stone fruit integrated with ripe green fruit, hints of hazelnut and brioche on the nose. The palate opens with creamy apricot and lemon zest, accompanied with hints of bread crumb, finishing persistent with lasting freshness and dryness, hazelnut and more creamy stone fruit. Do not over-chill and would be excellent baked breads, shellfish and as an aperitif.
