Cabernet Sauvignon 2014 Description ...
The fruit for the La Forge Estate Cabernet Sauvignon were sourced from La Forge Estate vineyards, a contracted addition to the 11 currently owned by Domaines Paul Mas. The heart of the winery is located on the east side of the city of Carcassonne, in the Languedoc. The Cabernet Sauvignon grapes were harvested at night from vines aged between 21 and 31 years old. The fruit was macerated and fermented, with further maceration before the parcels of fruit were gently pressed and passed into a mixture of 1st and 2nd use American and French oak barrels for 6 months.

The La Forge Estate Cabernet Sauvignon displays deep ruby red with intense notes of blackfruit, mingled with tobacco, vanilla and pepper on the nose. The palate is full and rich, with leafy blackcurrant and sweet blackberry, velvety soft, liquorice and underlying vanilla, finishing soft with some toasted oak and integrated spice. An excellent full bodied red that requires breathing 1-2 hours and will get even better with age 5-6 years. Best served with lamb, game and strong cheeses.
