Review for the 2015 Corralillo Sauvignon Blanc ...
The fruit for the Sauvignon Blanc were sourced from three different clones, harvested by hand in mid to late March, within the Organic and Biodynamic Rosario vineyard, San Antonio Valley. The fermentation was carried out in stainless steel tanks, over a 30 day period, with different parcels destemmed and others pressed as whole bunches, with the resulting wine allowed to rest on the Lees for a further 3 months, thus increasing aromatic complexity and mouthfeel.

The Corralillo Sauvignon appears a vibrant yellow with hints of green, followed by zingy citrus, herbal and an abundance of fresh tropical fruit, mingled with aromatic green fruit on the nose. The palate is fresh and full of ripe grapefruit, locked in with mango and deliciously sweet papaya fruit, finishing elegant with lasting minerality and even more zesty citrus fruit. An excellent Sauvignon blanc that is one of the best I have tasted from Chile. Do not overchill and allow to-open in the glass and would be best served young and fresh with grilled fish, or as an appetizer.
