Fairley’s Wines Tasting Note ...

The 2012 Tahbilk Cabernet appears almost black with expressive ripe spiced black fruit, mingled with mint and smoked oak on the nose. The palate complex and concentrated with savoury blackberry fruit, mint leaf and forest herbs, finishing full with integrated oak and even more dried cassis. An excellent Cabernet Sauvignon with extended aging potential but drinking really well now, allow to breathe 1-2 hours and would be best served with roasted beef, ribs and even a well-cooked steak.
