In collaboration with Basalt Distillery on the rugged north coast of Northern Ireland, state-of-the-art distilling technology, that delivers energy efficiency and ultimate precision, is used to create Paula McIntyre’s Rum. Fresh spring water from the distillery’s 600ft borehole is used to enhance this sustainably crafted product.
Colour - Dark, rich amber. Nose - Greeted by the alluring aromas of sweet honey, and hints of blackberry. These notes intertwine harmoniously, creating a sensory experience that is both indulgent and complimentary to Paula’s unique blend of rums. Taste - With each sip, the palate is enveloped in the flavours of Ballybannan honey, local blackberries, and Irish gorse. The sweetness of the honey, complemented by the subtle tartness of the blackberries, is elevated by the delicate essence of the gorse. The blend of Jamaican and Dominican rum adds depth and complexity, resulting in a refined and sophisticated taste profile.
