The Bundaberg distillery is located in Bundaberg region, central Queensland and was established in 1888. Bundaberg is one of the largest sugarcane producing regions in Australia and where Bundy Sugar Mill resides next door to the Bundy distillery. The fermented molasses goes through two distillations, firstly in column stills and then in pot stills. The distilled rum is transferred to large wooden Vats made from oak, holding 75,000 litres in each, where it spends the next 2 years before bottling.

The 23 Year Old Rum has been aged solely in American oak in the brick houses of the Bermudez Distillery, Santiago. The rum was named after a wooden schooner, which was used to smuggle rum in the 1920's, seized and renamed, ending its days as a coast guard boat in the 1940's. The aroma presents subtle notes of dried fruits and sweet, toasted breads, along with a base toffee, fresh honey and caramelized sugar. You can also appreciate a faint hint of almonds and vanilla.

Pusser’s British Navy Rum had been served on British ships for more than 300 years, since 1655 to 1970. The daily issue consisted of a pint per day per man and was affectionately known as the ‘Tot’. Navy or Admiralty rum is not just a name for dark rums but a name given to a blend of several rums, of which the major constituents were distilled in wooden pot stills. Aged for a minimum of three years, the rum is a blend of five different distillates, three from Guyana and two from Trinidad.

The 15 year old rum is a blended rum, hand crafted in small batches. The blend of rums are sourced from stills in Guyana and Trinidad, made in part from two high capacity wooden pot stills, that first went into production in 1732. The amazon greenwood staves of these wooden pot stills have absorbed decades of flavouring compounds and add something totally unique, that metal column stills cannot. The final blend is then aged for 15 years in oak barrels.
