The Cognac AOC is a controlled appellation of origin and is made up of six districts, which are Bois à Terroir or Bois Ordinaires, Bons Bois, Fins Bois, Borderies and the two most important, Grande Champagne and Petite Champagne. The region lies in the departments of Charente and Charente Maritime, just west is the Atlantic and Bordeaux and the River Gironde to the south.

Domaine Hine spans 173 acres across Grande Champagne and Petite Champagne, two of the finest crus in the region. The soil is chalky which acts like a sponge absorbing and retaining the water, perfect for the grape variety Ugni Blanc. The VSOP is a blend of 20 cognacs, aged for a minimum of 4 years. The cognac is blended in large oak vats and then returned to casks for a further 6 to 9 months. Dark copper with a fragrant aroma of jasmine and acacia, interwoven with notes of stone fruit and sweet vanilla on the nose.

The Rare VSOP Cognac is a blend of over 25 cognacs aged between 6 and 12 years, with the grapes sourced from Grande Champagne and Petite Champagne. The Blend is then further aged in French oak casks for 6 to 9 months, resulting in a very fine champagne cognac.

The Maxime Trijol VSOP Cognac Grande Champagne is a blend from cognacs aged between 10 and 20 years. The Ugni Blanc grape is sourced from estate vineyards, within Grande Champagne and after fermentation the alcohol goes through two stages of distillation, Brouillis and La Bonne Chauffe, both carried out in 2500Lt Charente copper pot stills. After distillation, the cognac is aged in French oak barrels sourced from the Limousin forest.

The Maxime Trijol XO Cognac Grande Champagne is a blend from very old cognacs with a minimum age 10 years, double distilled within Charente Stills. The fifth-generation estate was founded in 1859 and is located in Saint Martial Sur Ne, in the heart of Cognac’s Grande Champagne Cru. Currently the distillery has 22 2500Lt Charente Stills in production with cognacs produced aged between 10 and 40 years old, one of the biggest family owned distillers in the Cognac region.
