The clear apple gin is an infusion of 9 different botanicals, with maceration taking place separately, using a neutral rice and wheat-based spirit. The process taking from 30 days to up to 9 months, with the distillation being carried out individually in copper pot stills, named ‘The Minions’. Three of the botanicals are sourced locally within the Alentejo Region and two specifically from António Cuco own estate.

Nose - "Upfront apple with juniper mingled with orange and cloves."
Palate - "Rich red apple locked in with spiced citrus and lasting lemon, touches of juniper followed by warm clove."
Finish - "Fresh with lingering zesty citrus fruit and cinnamon."
Perfect Serve - I part Apple Gin / Glass filled with ice / Add a slice of red apple and squeezed lemon / Topped up with a good Tonic.
