The wild blackberries are picked in August from the local Wicklow hedgerows, the heather from the Wicklow Mountains and placed in the signature gin, allowed to macerate for a couple of weeks, until the gin is infused black from the ripen blackberries. The result a natural rich gin with blackberry fruit and honey, mingled with floral tones.
