The wild Sloes are harvested in late Autumn by Glendalough Distillery's very own forager 'Geraldine Kavanagh' and each sloe is picked with a thorn from the blackthorn tree it comes from, prior to infusion with the Juniper, coriander, angelica and orange peel signature gin, which is carried out over a 6 month period.

Nose - "Earthy fruit, almond, vanilla."
Palate - "When young it is fresh and tannic with lots of fruit, notes of almond and clove. As it ages, it mellows, getting sweeter and Madeira like."
Finish - "Warm and spicy."
Perfect Serve - Neat. In a G&T, suggested garnishes: fresh pine needles/thyme/orange twist/cinnamon stick. With Sparkling wine.
