The Distillery uses a 350LT Geterbrewed Copper pot still manufactured from locally sourced copper. Distiller Neil Armstrong is responsible for the 13 botanical base gin, with recipe development in the hands of Jonathan. Each small batch distillation takes approximately 3 to 4 days, from the hot steeping of botanicals, to the distillation process itself.

The base gin is usually hot steeped initially for 36 hours, with distillation taking place over an 8/10 hour circle, with batch producing approximately 300 bottles, with the heads and tails reused, all prior to infusion of the butterfly pea flower, which normally takes just a few hours.

Palate – Juniper front with delightful sweet citrus, touches of liquorice and much more.

The Randalstown gin has been produced by owners Deborah and Jonathan Mitchell, from neutral based grain spirit distilled in Dublin. The gin uses 13 different botanicals distilled in a locally made Copper Pot still, with the copper itself sourced from Ireland.
